Ingredients:

  • protein pancake mix (ie. Kodiak Power Cakes)
  • milk (or milk alternative or water)
  • oil (coconut, avocado, or vegetable)
  • syrup (maple, pancake, or sugar free)
  • vanilla extract

For the Topping:

  • light brown sugar
  • cinnamon

Step-by-Step Directions:

Step 1: Begin by adding the pancake mix to the mug. Add wet ingredients to the mug and whisk or stir with a fork.

Step 2: Combine the brown sugar and the cinnamon in a small bowl and sprinkle over the batter in the mug. Gently stir with a fork to incorporate the topping into the top layer of the batter.

Step 3: Microwave for about 1 1/2 minutes being careful as the mug can get hot. Enjoy as is or top with more syrup or whipped cream. Yummy!

  • Spray the inside of the mug with nonstick spray oil, if desired, before adding ingredients.
  • If you’re using coconut oil, make sure it is melted before adding it.
