- ⅓ cup protein pancake mix (ie. Kodiak Power Cakes)
- 3 Tbsp milk (or milk alternative or water)
- 1 Tbsp syrup (pancake, maple, or sugar free)
- ½ tsp vanilla extract
- 1 tsp oil (coconut, avocado, vegetable)
For the Topping:
- 1 Tbsp light brown sugar
- ¼ tsp cinnamon
Begin by adding the pancake mix to the mug. Add wet ingredients to the mug and whisk or stir with a fork.
Combine the brown sugar and the cinnamon in a small bowl and sprinkle over the batter in the mug. Gently stir with a fork to incorporate the topping into the top layer of the batter.
Microwave for about 1 1/2 minutes being careful as the mug can get hot. Enjoy as is or top with more syrup or whipped cream. Yummy!
- Spray the inside of the mug with nonstick spray oil, if desired, before adding ingredients.
- If you're using coconut oil, make sure it is melted before adding it.
