Cinnamon Streusel Muffin-in-a-Mug

With just a few simple ingredients, you can savor a warm, convenient breakfast with 12 grams of protein that also happens to be incredibly delicious! This Cinnamon Streusel Muffin-in-a-Mug will have you ready to go in just a few minutes!

Ingredients:
- protein pancake mix (ie. Kodiak Power Cakes)
- milk (or milk alternative or water)
- oil (coconut, avocado, or vegetable)
- syrup (maple, pancake, or sugar free)
- vanilla extract
For the Topping:
- light brown sugar
- cinnamon

Step-by-Step Directions:
Step 1: Begin by adding the pancake mix to the mug. Add wet ingredients to the mug and whisk or stir with a fork.

Step 2: Combine the brown sugar and the cinnamon in a small bowl and sprinkle over the batter in the mug. Gently stir with a fork to incorporate the topping into the top layer of the batter.

Step 3: Microwave for about 1 1/2 minutes being careful as the mug can get hot. Enjoy as is or top with more syrup or whipped cream. Yummy!

Tips:
- Spray the inside of the mug with nonstick spray oil, if desired, before adding ingredients.
- If you’re using coconut oil, make sure it is melted before adding it.
