Ingredients:

  • ⅓ cup protein pancake mix
  • 3 Tbsp milk (or milk alternative or water)
  • 1 Tbsp syrup (maple, pancake, or sugar free)
  • 1 tsp oil (coconut, avocado, or vegetable)
  • ½ tsp vanilla extract

For the Topping:

  • 1 Tbsp light brown sugar
  • ¼ tsp cinnamon

Step-by-Step Directions:

Step 1: Spray the inside of the mug with nonstick spray oil, if desired, before adding ingredients. Add the pancake mix to a microwave safe mug. Stir or whisk in the wet ingredients.

Step 2: Combine the brown sugar and the cinnamon in a small bowl and sprinkle over the batter in the mug. Gently stir with a fork to incorporate the topping into the top layer of the batter.
