Cinnamon Streusel Muffin-in-a-Mug

This Cinnamon Streusel Muffin-in-a-Mug gives you all the warm cinnamon flavor and crumbly streusel topping you love in a single-serving breakfast that’s ready in minutes. Ingredients:
- ⅓ cup protein pancake mix (ie. Kodiak Power Cakes)
- 3 Tbsp milk (or milk alternative or water)
- 1 Tbsp syrup (maple, pancake, or sugar free)
- 1 tsp oil (coconut, avocado, or vegetable)
- ½ tsp vanilla extract
For the Topping:
- 1 Tbsp light brown sugar
- ¼ tsp cinnamon

Step-by-Step Directions:
Step 1: Begin by adding the pancake mix to the mug. Add wet ingredients to the mug and whisk or stir with a fork.

Step 2: Combine the brown sugar and the cinnamon in a small bowl and sprinkle over the batter in the mug. Gently stir with a fork to incorporate the topping into the top layer of the batter.

Step 3: Microwave for about 1 1/2 minutes being careful as the mug can get hot. Enjoy as is or top with more syrup or whipped cream. Yummy!
Tips for a perfect microwaved muffin:
- Spray the inside of the mug with nonstick spray oil, if desired, before adding ingredients.
- Most microwaves will take about 1 minute 30 seconds. Avoid stopping the microwave until the time is up for the fluffiest muffin.
- If you’re using coconut oil, make sure it is melted before adding it.
