  • frozen sausage patties (any kind)
  • frozen or fresh sweet potato (10oz)
  • eggs (12) or liquid egg substitute
  • green onions (finely chopped)
  • mozzarella cheese (shredded)
  • salt & pepper to taste

Step-by-Step Directions:

Step 1: Whisk the 12 eggs in a medium-sized mixing bowl and add salt and pepper. Layer the sausage patties onto the bottom of a 9×13 baking dish. Sprinkle the frozen sweet potatoes on top of the patties. Pour the egg mixture into the baking dish and sprinkle with finely chopped green onions and shredded mozzarella cheese. Bake at 375ºF for 50-60 minutes. Let the casserole cool slightly before slicing. Serve with salsa, sour cream, or hot sauce, if desired.
