- 9-12 frozen sausage patties (any kind)
- 10 oz frozen or fresh sweet potato (10oz bag)
- 12 eggs or liquid egg subsutite (If using a liquid egg substitute, four large eggs = ¾ cup of liquid egg substitute.)
- ¼-½ cup green onions finely chopped
- ¼ cup mozzarella cheese shredded
- salt & pepper to taste
Whisk the 12 eggs in a medium-sized mixing bowl and add salt and pepper. Layer the sausage patties onto the bottom of a 9x13 baking dish. Sprinkle the frozen sweet potatoes on top of the patties. Pour the egg mixture into the baking dish and sprinkle with finely chopped green onions and shredded mozzarella cheese. Bake at 375ºF for 50-60 minutes. Let the casserole cool slightly before slicing. Serve with salsa, sour cream, or hot sauce, if desired.
