🍋 Simply Made Suggestions
- Protein Pancake Mix: Any protein pancake mix should work here. We’ve made these mug muffins with both Kodiak Cakes and Krusteaz. Krusteaz has a flavor and texture that’s closer to traditional pancake mix, while Kodiak Cakes has more of a whole-grain taste. Use whichever you prefer—or whichever one is already in the pantry. No special shopping trip required.
- Microwave Timing: We cook our mug muffins for 1½ minutes in a 900-watt microwave, which gives us a fully cooked muffin that’s springy in the center. Microwave wattages vary, so adjust the cooking time as needed. The muffin is ready when the center is set and springs back lightly when touched.
- Chocolate Chips: I used semi-sweet chocolate chips, but dark, milk, or white would also taste amazing!
