Ingredients:

  • ⅓ cup protein pancake mix
  • 2 Tbsp cocoa powder
  • 1 Tbsp chocolate chips
  • 3 Tbsp milk (or milk alternative)
  • 1 tsp oil (coconut, avocado or vegetable)
  • 1 Tbsp syrup (maple, pancake, or sugar free)
  • ½ tsp vanilla extract

Step-by-Step Directions:

Step 1: Spray the inside of a microwave safe mug with nonstick cooking spray, if desired. Add the protein pancake mix to the mug, then stir in the cocoa powder and chocolate chips.

Step 2: Add the milk, oil, syrup, and vanilla extract to the mug. Stir in the wet ingredients until just combined making sure to scrape the sides of the mug.

Step 3: Microwave for 1 ½ minutes. Top with whipped cream, if you like, and enjoy this warm, easy breakfast!

🍋 Simply Made Suggestions

  • Protein Pancake Mix: Any protein pancake mix should work here. We’ve made these mug muffins with both Kodiak Cakes and Krusteaz. Krusteaz has a flavor and texture that’s closer to traditional pancake mix, while Kodiak Cakes has more of a whole-grain taste. Use whichever you prefer—or whichever one is already in the pantry. No special shopping trip required.
  • Microwave Timing: We cook our mug muffins for 1½ minutes in a 900-watt microwave, which gives us a fully cooked muffin that’s springy in the center. Microwave wattages vary, so adjust the cooking time as needed. The muffin is ready when the center is set and springs back lightly when touched.
  • Chocolate Chips: I used semi-sweet chocolate chips, but dark, milk, or white would also taste amazing!
