🍋 Simply Made Suggestions & Swaps:

  • Protein Pancake Mix: Any protein pancake mix should work here. We’ve made these mug muffins with both Kodiak Cakes and Krusteaz. Krusteaz has a flavor and texture that’s closer to traditional pancake mix, while Kodiak Cakes has more of a whole-grain taste. Use whichever you prefer—or whichever one is already in the pantry. No special shopping trip required.
  • Oil: Coconut, avocado, or vegetable oil all work in this recipe. If using coconut oil, melt it before adding it to the batter.
  • Greasing the Mug: This step is optional, but a light coating of nonstick cooking spray makes the finished muffin easier to remove from the mug.
  • Microwave Timing: We cook this muffin for 1½ minutes in a 900-watt microwave, which gives us a fully cooked muffin that’s springy in the center. Microwave wattages vary, so adjust the cooking time as needed. The muffin is ready when the center is set and springs back lightly when touched.
