Chocolate Chip Muffin in a Mug

An easy single-serving Chocolate Chip Muffin in a Mug made with protein pancake mix and chocolate chips. Mix it right in the mug and microwave for about 1½ minutes for a quick breakfast or snack.

Ingredients

  • cup protein pancake mix
  • 3 Tbsp milk (or milk alternative or water)
  • 1 tsp oil (coconut, avocado, or vegetable)
  • 1 Tbsp syrup (maple, pancake, or sugar free)
  • ½ tsp vanilla extract
  • 1 Tbsp chocolate chips (plus a little more)

Instructions

  • Begin by adding the pancake mix to a microwave safe mug. Stir in the chocolate chips.
  • Add the wet ingredients to the mug and whisk or stir with a fork. Sprinkle some more chocolate chips on top.
  • Microwave for about 1 ½ minutes being careful as the mug can get hot. Enjoy as is or top with more syrup or whipped cream.

Notes

  • Pancake mix: Any protein pancake mix should work. We’ve tested this recipe with Kodiak Cakes and Krusteaz. Krusteaz is closer to traditional pancake mix, while Kodiak has more of a whole-grain flavor.
  • Prevent sticking: Lightly grease the mug with coconut oil or nonstick cooking spray before adding the batter.
  • Microwave time: We cook ours for 1½ minutes in a 900-watt microwave. Microwave power varies, so adjust the time as needed. The center should be set and spring back lightly when touched.
