This chocolate chip muffin in a mug is a game-changer. It’s made with protein pancake mix so it has 12 grams of protein and cooks in just a minute!

Ingredients

  • cup protein pancake mix (ie. Kodiak Power Cakes)
  • 3 Tbsp milk (or milk alternative or water)
  • 1 tsp oil (coconut, avocado, or vegetable)
  • 1 Tbsp syrup (maple, pancake, or sugar free)
  • ½ tsp vanilla extract
  • 1 Tbsp mini chocolate chips

Instructions

  • Begin by adding the pancake mix to the mug. Stir in the chocolate chips.
  • Add the wet ingredients to the mug and whisk or stir with a fork.
  • Microwave for 1-1 1/2 minutes being careful as the mug can get hot. Enjoy as is or top with more syrup or whipped cream. Yummy!

Notes

  • Spray the inside of the mug with nonstick spray oil, if desired, before adding ingredients.
  • If you're using coconut oil, make sure it is melted before adding it.
