Birthday Cake Muffin-in-a-Mug

This quick and easy muffin mixes and cooks in a mug in just a couple of minutes. Plus, this Birthday Cake Muffin-in-a-Mug has 11 grams of protein! Such a yummy way to start your day!

Ingredients:

  • protein pancake mix (ie. Kodiak Power Cakes)
  • milk (or milk alternative)
  • oil (coconut, avocado or vegetable)
  • syrup (maple, pancake, or sugar free)
  • almond extract (or vanilla)
  • rainbow sprinkles
  • Optional:
    • whipped cream

Step-by-Step Directions:

Step 1:Spray the inside of a mug with nonstick cooking spray, if desired. Add the protein pancake mix to the mug, then stir in the milk, oil, syrup, and almond (or vanilla) extract. Be sure to scrape the sides and bottom to incorporate all of the dry ingredients.

Step 2: When all of the ingredients are throughly combined, quickly stir in the sprinkles so you don’t lose all of the fun colors.

Step 3: Microwave for 1 1/2 minutes. Let cool for a minute then top with whipped cream and more sprinkles if desired. Enjoy!

Tips:

  • Almond extract is much stronger than vanilla extract so use 1/8-1/4 tsp of almond or 1/2 tsp of vanilla.
