Holiday Cranberry Pomegranate Sparkler
A little freezer prep makes this holiday cocktail look like you went all out. Cranberry-pomegranate juice, cranberries and fresh rosemary freeze into a pretty angled layer in each glass. When it’s time to serve, just add chilled sparkling wine. The muffin tin does the balancing, and you get the compliments.

Servings: 6
Prep Time: 5 minutes
Freeze Time: About 6 hours, or until solid
Cook Time: None
Ingredients
- 1¼ cups cranberry-pomegranate juice (more or less)
- ¼ cup frozen cranberries, or a few per glass
- 6 small sprigs fresh rosemary, rinsed
- 1 bottle (750 ml) Champagne, Prosecco or other sparkling wine, chilled

Step-by-Step Directions
Step 1: Arrange six freezer-safe plastic Champagne glasses at an angle in a muffin tin. Make sure each glass is supported and stays in place.
Step 2: Divide the cranberry-pomegranate juice evenly among the glasses, using about 3 tablespoons plus 1 teaspoon per glass, more or less. Keep the juice below the rim as you tilt the glasses.

Step 3: Add a few frozen or fresh cranberries and one small cutsprig of rosemary to each glass, positioning them in the juice.

Step 4: Carefully transfer the muffin tin to the freezer, keeping the glasses tilted. Freeze for about 4–6 hours, or until the juice is completely solid.
Step 5: When ready to serve, remove the glasses from the muffin tin and stand them upright. Slowly divide the chilled sparkling wine among the glasses, leaving room at the top. Pour a little at a time and let the foam settle between pours.

Step 6: Serve immediately. The frozen juice will gradually melt into the sparkling wine, adding cranberry-pomegranate flavor as you sip.

🍋 Simply Made Suggestions
- Choose your bubbly: Brut sparkling wine gives a less sweet drink, while a sweeter variety makes a sweeter cocktail.
- Prep the night before: Freeze the juice and garnishes ahead of time, then add the sparkling wine when guests arrive.
- Check your glasses: Use plastic glasses labeled freezer-safe. If yours aren’t, freeze the juice and garnishes in silicone molds and add the cubes to your serving glasses.
- Make it alcohol-free: Swap the sparkling wine for sparkling white grape juice or lime seltzer.
- Skip the stir: Let the frozen layer melt naturally to keep that pretty presentation.
