Chocolate Chocolate Chip Muffin-in-a-Mug

This double chocolate muffin-in-a-mug tastes like dessert, but has 13 grams of protein! Best of all, it only takes minutes to make! Enjoy this warm chocolate chip mug muffin for breakfast or a tasty treat any time of day!

Ingredients:

  • protein pancake mix (ie. Kodiak Power Cakes)
  • cocoa powder
  • chocolate chips
  • milk (or milk alternative)
  • oil (coconut, avocado or vegetable)
  • syrup (maple, pancake, or sugar free)
  • vanilla extract

Step-by-Step Directions:

Step 1: Spray the inside of a mug with nonstick cooking spray, if desired. Add the protein pancake mix to the mug, then stir in the cocoa powder and chocolate chips.

Step 2: Add the milk, oil, syrup, and vanilla extract to the mug. Stir in the wet ingredients until just combined making sure to scrape the sides of the mug.

Step 3: Microwave for 1 1/2 minutes. Top with whipped cream, if you like, and enjoy the warm, easy breakfast!

Tips:

  • I used semi-sweet chocolate chips, but dark, milk, or white would also taste amazing!

  • 1 tsp oil (coconut, avocado or vegetable)
  • 1 Tbsp syrup (maple, pancake, or sugar free)
  • 1/2 tsp vanilla extract

Instructions

  • Spray the inside of a mug with nonstick cooking spray, if desired. Add the protein pancake mix to the mug, then stir in the cocoa powder and chocolate chips.
  • Add the milk, oil, syrup, and vanilla extract to the mug. Stir in the wet ingredients until just combined making sure to scrape the sides of the mug.
  • Microwave for 1 1/2 minutes. Top with whipped cream if you like and enjoy the warm, easy breakfast!
