Crispy Baked Parmesan Potatoes

These little parmesan potatoes are soft on the inside, crispy on the outside and packed with flavor! They are small, so they cook quickly. Perfect for a weeknight dinner! They are so versatile and can be enjoyed with a steak or your favorite sandwich! Ingredients:

  • 25-30 baby potatoes
  • 6 Tbsp butter, divided
  • 5 Tbsp parmesan cheese, divided
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • pepper to taste

Step 1: Preheat oven to 425º F. Cut potatoes in half lengthwise. Place 3 Tbsp of butter on a baking sheet and place in warming oven for a minute to melt.

Step 2: Carefully remove the hot sheet from the oven and add all seasonings and 2 Tbsp of parmesan cheese to melted butter. Spread evenly over baking sheet.

Step 3: Place potatoes, cut side down, on baking sheet. Melt 1-2 more Tbsp of butter and brush over tops of potatoes. Sprinkle 2 more Tbsp of parmesan over potatoes.

Step 4: Carefully place in preheated oven and bake for 20-25 minutes. Potatoes should be tender when pierced with a fork and crispy on the cut side.
