Baked Buffalo Chicken Thighs

The search for weeknight dinners is endless, so we’re always looking for easy meals that everyone will love. These Baked Buffalo Chicken Thighs have 3 simple ingredients (plus salt and pepper) and bake in the oven for the ultimate convenience. Serve them up with fresh garden salad (for a low carb option) or French fries and dinner is done!

Ingredients:

  • 5-6 bone-in chicken thighs
  • 1/3 cup Frank’s Red Hot Wing’s Buffalo Sauce (or your favorite buffalo sauce)
  • salt and pepper to taste
  • Opitonal:
    • blue cheese crumbles

Step-by-Step Directions:

Step 1: Preheat your oven to 400º F. Dry the chicken thighs and trim any excess skin (or remove the skin completely), then salt and pepper both sides. Place in an even layer in a baking dish (I used a 9×13 glass dish), skin-side up, and bake in the preheated oven for 15 minutes.

Step 2: Carefully remove the dish from the oven and flip the chicken pieces over. Brush each one with half of the buffalo sauce and return the dish to the oven. Bake for 15 more minutes.

Step 3: Flip the chicken over so it is skin-side up again and brush with remaining sauce. Bake for 15 more minutes or until cooked through (165º F when taken with an instant thermometer).

Step 4: If desired, sprinkle with blue cheese crumbles (I have 2 kids that prefer without so I just skip those) and bake for 5 more minutes or until cheese is melted and bubbly. Serve with your choice of side and enjoy!

Tips:

  • We prefer bone-in for this recipe as it adds flavor and keeps the chicken from drying out. You can use boneless thighs, but they will cook faster (about 20 minutes, but always check with a meat thermometer).
  • You can also broil your chicken in the last step to melt the cheese. It will be faster and the cheese will brown up nicely, but always make sure that your baking dish is broiler safe!
  • Serve with a side or Ranch or Blue Cheese Dressing!
