Butterscotch Pumpkin Muffins

Ingredients:

  • spice cake mix
  • can of pumpkin
  • eggs
  • butterscotch chips
  • powdered sugar
  • vanilla extract
  • milk

Step 1: Preheat oven to 350º F. Using an electric hand mixer combine cake mix, eggs and pumpkin together. Using a wooden spoon fold the butterscotch chips into the mixture.

Step 2: Place muffin baking cups into muffin tray slots. Pour about ¼ cup of muffin batter into each cup. *If using extra large muffin baking cups and add more batter. Bake for 16-20 minutes or until a toothpick comes out clean when placing it into the center of the muffin. Larger muffins require a longer bake time. Let cool.

Step 3: While muffins are cooling make the icing. Place powdered sugar, milk and vanilla extract into a bowl and whisk together until icing is smooth. Drizzle over cooled muffins. Icing will set and harden after 15-20 minutes. Enjoy!

*Caution-Muffin tin will be hot when removing from heated oven!

Tips-

  • If icing is too thick, then add additional milk for desired consistency.
  • Baking times for larger muffins may vary.

  • 1-2 Tbsp milk
