Peanut Butter Banana Muffin-in-a-Mug
We love a quick breakfast in our busy household and these muffins never miss the mark! This peanut butter banana muffin has 14 grams of protein and takes just minutes to make in a mug. Plus, it’s super yummy!

Ingredients:
- protein pancake mix (ie. Kodiak Power Cakes)
- peanut butter powder (with a pinch of salt)
- ripe banana
- milk (or milk alternative)
- oil (coconut, avocado or vegetable)
- syrup (maple, pancake, or sugar free)
- vanilla extract
- Optional:
- Nonstick spray
- whipped cream topping

Step-by-Step Directions:
Step 1: Begin by mashing the ripe banana. Spray the inside of a mug with nonstick cooking spray if desired.

Step 2: Add the protein pancake mix to the mug, then stir in the peanut butter powder.

Step 3: Add the banana, milk, oil, syrup, and vanilla extract. Stir to combine all of the ingredients until mixed, making sure to scrape the sides and bottom.


Step 4: Microwave for about 1 1/2 minutes. Top with whipped cream and enjoy!

Tips:
- You can also use traditional creamy peanut butter. Use 1 Tbsp of peanut butter and omit the oil.
- If you’re using coconut oil, be sure to melt it before adding it to the recipe.
