- ⅓ cup protein pancake mix (ie. Kodiak Power Cakes)
- 1 Tbsp peanut butter powder (with a pinch of salt)
- ⅓ ripe banana
- 3 Tbsp milk (or milk alternative)
- 1 tsp oil (coconut, avocado or vegetable)
- 1 Tbsp syrup (maple, pancake, or sugar free)
- ½ tsp vanilla extract
Optional:
- nonstick spray
- whipped cream topping
Begin by mashing the ripe banana. Spray the inside of a mug with nonstick cooking spray if desired.
Add the protein pancake mix to the mug, then stir in the peanut butter powder.
Add the banana, milk, oil, syrup, and vanilla extract. Stir to combine all of the ingredients until mixed, making sure to scrape the sides and bottom.
Microwave for about 1 1/2 minutes. Top with whipped cream and enjoy!
- You can also use traditional creamy peanut butter. Use 1 Tbsp of peanut butter and omit the oil.
- If you're using coconut oil, be sure to melt it before adding it to the recipe.
