This Slow Cooker Whole Chicken with Herbs gives you tender, juicy chicken with carrots, celery, onion and fresh herbs—all with about 15 minutes of prep. Ingredients
- 2 carrots, diced or sliced
- 1 small yellow onion, diced
- 2 celery ribs, diced or sliced
- 4–5 lb – whole chicken
- ½ cup salted butter melted
- 1 sprig fresh rosemary
- 1 sprig fresh thyme
- 2–3 fresh sage leaves
- ½–¾ tsp paprika
- Salt and pepper, to taste
- Optional: 2 (6-ounce) boxes store-bought stuffing mix

Step-by-Step Directions
Step 1: Remove the chicken from the packaging and remove anything from the cavity. Arrange the carrots, onion and celery in the bottom of the slow cooker, then place the chicken on top.

Step 2: Pour the melted butter over the chicken. Sprinkle with paprika, salt and pepper, then place the rosemary, thyme and sage on top. Cover and cook on Low for 7–8 hours or High for 4–5 hours, or until the chicken is fully cooked.
Step 3: Remove and discard the herb sprigs and sage leaves. Carefully transfer the chicken to a serving platter and let it rest briefly before carving.


Optional Stuffing
After removing the chicken, add two 6-ounce boxes of stuffing mix directly to the juices and cooked vegetables remaining in the slow cooker. Stir well and let stand for about 5 minutes, or until the liquid is absorbed. - No fresh herbs? Substitute 1 teaspoon each dried rosemary, thyme and sage. You can also use oregano in place of the sage.
