- 2 carrots (sliced or diced)
- 1 small yellow onion (diced)
- 2 celery ribs (sliced or diced)
- 4-5 lb. whole chicken
- ½ cup salted butter (melted)
- 1 sprig of fresh rosemary & thyme of each
- 2-3 leaves of fresh sage
- ½ tsp paprika
- salt & pepper to taste
Remove the chicken from the packaging and remove anything from the cavity. Arrange the carrots, onion and celery in the bottom of the slow cooker, then place the chicken on top.
Pour the melted butter over the chicken. Sprinkle with paprika, salt and pepper, then place the rosemary, thyme and sage on top. Cover and cook on Low for 7–8 hours or High for 4–5 hours, or until the chicken is fully cooked.
Remove and discard the herb sprigs and sage leaves. Carefully transfer the chicken to a serving platter and let it rest briefly before carving.
Optional Stuffing: After removing the chicken, add two 6-ounce boxes of stuffing mix directly to the juices and cooked vegetables remaining in the slow cooker. Stir well and let stand for about 5 minutes, or until the liquid is absorbed. Fluff with a fork and serve alongside the chicken.
- The paprika adds color to the chicken since the skin will not get crispy in the slow cooker.
