Roasted Sweet Potato
A roasted sweet potato is a wonderful side dish or a great addition to many recipes. Make these bite sized sweet potato pieces ahead of time to toss into stews, salads and hashes.

- sweet potato
- olive oil or olive oil spray
- cinnamon (optional)

Step 1: Preheat oven to 400 º F. Wash, peel and cut sweet potato into bite size pieces. Place onto a parchment paper or foil lined baking sheet for easy clean up. Drizzle or spray the olive oil onto the sweet potato chunks. Add a dash of cinnamon, if desired. Bake for 40-50 minutes until sweet potato pieces are soft.
*Caution-take care when removing from the oven. Baking sheet will be hot!
