Cranberry & Eggnog Loaf

Ingredients:

  • all purpose flour
  • sugar
  • dried cranberries
  • baking powder
  • salt
  • nutmeg
  • butter-softened
  • eggnog
  • eggs
  • vanilla extract
  • powdered sugar

Step 1: Set oven to 350º F.

Step 2: Grease or line a loaf pan with parchment paper, using extra paper over the edges for easy removal.

Step 3: In a large mixing bowl place the first 6 ingredients.

Step 4: In a separate bowl add the softened butter, eggs, vanilla extract and the eggnog. Using an electric hand mixer blend ingredients together.

Step 5: Add wet ingredients to dry ingredients, and using a wooden spoon, mix together. Batter should be thick and heavy.

Step 6: Place the batter into the lined loaf pan and using the back of a spoon smooth batter out.

Step 7: Bake loaf for 50-60 minutes.

Step 8: While bread is baking make the sugar glaze. Place powdered sugar and eggnog in a medium sized mixing bowl. Whisk the powdered sugar and eggnog together until creamy with a hand whisk.

Step 9: Cool bread completely before gently pouring the glaze over the bread. Enjoy!

Ingredients

  • 2 cups all purpose flour

  • ¼ tsp salt

  • 2-3 Tbsp eggnog
  • 1 cup powdered sugar
