Loaf Ingredients:
- 2 cups all purpose flour
- 1 cup sugar
- ½ cup dried cranberries
- 1 tsp baking powder
- ¼ tsp salt
- ½ tsp nutmeg
- ½ cup butter (softened)
- 2 eggs (large)
- 1 tsp vanilla extract
- 1 cup eggnog
Glaze Ingredients:
- 2-3 Tbsp eggnog
- 1 cup powdered sugar
Set oven to 350º F.
Grease or line a loaf pan with parchment paper, using extra paper over the edges for easy removal.
In a large mixing bowl place the first 6 ingredients.
In a separate bowl add the softened butter, eggs, vanilla extract and the eggnog. Using an electric hand mixer blend ingredients together.
Add wet ingredients to dry ingredients, and using a wooden spoon, mix together. Batter should be thick and heavy.
Place the batter into the lined loaf pan and using the back of a spoon smooth batter out.
Bake loaf for 50-60 minutes.
While bread is baking make the sugar glaze. Place powdered sugar and eggnog in a medium sized mixing bowl. Whisk the powdered sugar and eggnog together until creamy with a hand whisk.
Cool bread completely before gently pouring the glaze over the bread. Enjoy!
