Ingredients

Loaf Ingredients:

  • 2 cups all purpose flour
  • 1 cup sugar
  • ½ cup dried cranberries
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ tsp nutmeg
  • ½ cup butter (softened)
  • 2 eggs (large)
  • 1 tsp vanilla extract
  • 1 cup eggnog

Glaze Ingredients:

  • 2-3 Tbsp eggnog
  • 1 cup powdered sugar

Instructions

  • Set oven to 350º F.
  • Grease or line a loaf pan with parchment paper, using extra paper over the edges for easy removal.
  • In a large mixing bowl place the first 6 ingredients.
  • In a separate bowl add the softened butter, eggs, vanilla extract and the eggnog. Using an electric hand mixer blend ingredients together.
  • Add wet ingredients to dry ingredients, and using a wooden spoon, mix together. Batter should be thick and heavy.
  • Place the batter into the lined loaf pan and using the back of a spoon smooth batter out.
  • Bake loaf for 50-60 minutes.
  • While bread is baking make the sugar glaze. Place powdered sugar and eggnog in a medium sized mixing bowl. Whisk the powdered sugar and eggnog together until creamy with a hand whisk.
  • Cool bread completely before gently pouring the glaze over the bread. Enjoy!
