White Chocolate Pumpkin Loaf

Ingredients:

  • spice cake mix
  • can of pumpkin
  • white chocolate chips
  • mini loaf pan- 8 loaves
  • eggs
  • baking spray

Step 1: Preheat oven to 350º F. In a large mixing bowl, place the cake mix, eggs and the pumpkin. Using an electric hand mixer combine ingredients.

Step 2: Generously coat the loaf tin with baking spray. Pour the batter equally into the 8 mini loaf slots. Sprinkle white chocolate chips on top. Bake for 21 minutes or until a toothpick comes out clean when placing it into the center of each loaf. Let cool before carefully removing from tin. Enjoy!

Tips-

  • Try making mini muffins (cooking times will vary)
  • For a sweeter tasting loaf add ⅓ cup of white chocolate chips into the batter before baking.
