White Chocolate Chip Mini Pumpkin Loaves

Equipment

  • 1 electric hand mixer
  • mini bread loaf pan - 8 loaves

Ingredients

  • 1 pkg. spice cake mix
  • 1 can pumpkin
  • 1/3 cup white chocolate chips (approx.)
  • 2 eggs
  • baking spray

Instructions

  • Preheat oven to 350º F. In a large mixing bowl, place the cake mix, eggs and the pumpkin. Using an electric hand mixer combine ingredients.
  • Generously coat loaf tin with baking spray. Pour batter equally into the 8 mini loaf slots. Sprinkle white chocolate chips on top. Bake for 21 minutes or until a toothpick comes out clean when placing it into the center of each loaf. Let cool before carefully removing from tin. Enjoy!
    *Caution-Loaf pan will be hot when removing from the hot oven!

Notes

    • Try making mini muffins (cooking times will vary)
    • For a sweeter tasting loaf fold ⅓ cup of white chocolate chips into batter before baking.
