Harvest Bowl

This all in one bowl has everything you need for a healthy lunch or dinner meal. Packed with protein, vegetables and grains, this dish will keep you satisfied throughout a busy day.

Ingredients:

  • sweet potato or butternut squash
  • grilled and ready pre-pkg. chicken strips
  • kale
  • brown and wild rice-microwave minute rice cup was used in this recipe
  • olive oil
  • balsamic glaze
  • green beans
  • cherry tomatoes
  • goat cheese
  • dried cranberries (optional)

Step 1: Follow package instructions to make microwave cup of rice.

Step 2: Using a food scale, measure 3 ounces of chicken breast meat. Put the kale into a bowl with the olive oil. Using your hand massage the kale and the oil together. *The kale is the bowl base. Place all ingredients on top of the kale. Finish by drizzling the balsamic glaze on top of the bowl ingredients. Enjoy your Harvest Bowl!

Tips-

  • Roasted Butternut Squash recipe.
  • Cooking instructions for sweet potato. Preheat oven to 400 º F. Wash, peel and cut sweet potato into chunks or bite size pieces. Place onto a parchment paper or foil lined baking sheet for easy clean up. Drizzle half of the olive oil and the cinnamon onto the sweet potatoes. Bake for 40-50 minutes. Let cool.
  • *Sweet potato and butternut squash can be made ahead of time. Place extra, in a Tupperware container and put in the refrigerator for up to 3 days.

  • Swap rice for quinoa, black, pinto or garbanzo beans.

  • 3 oz grilled and ready pre-packaged chicken strips
  • 2 cups kale
  • 1 cup brown and wild rice *microwave minute rice cup was used in this recipe
  • 1 tsp olive oil
  • balsamic glaze or vinegar Drizzle
  • 1/2 cup green beans
  • 1/4 cup cherry tomatoes
  • 1 Tbsp goat cheese
  • dried cranberries (optional)

Instructions

  • Follow package instructions to make microwave cup of rice.
  • Using a food scale, measure out 3 ounces of chicken breast meat. Put the kale into a bowl with the remaining olive oil. Using your hand, massage the kale and the oil together. *The kale is the bowl base. Place all ingredients on top of the kale. Finish by drizzling the balsamic glaze on top of the bowl ingredients. Notes
