Baked Boursin Pasta
We love this pasta because it is so easy and flavorful. When this recipe started making the rounds on social media, I decided to try it with some variations. It has since made it into our regular rotation and was a favorite of my oldest and her best friend in college since it’s such a simple dish!

Ingredients:
- Boursin cheese spread
- grape tomatoes
- olive oil
- salt and pepper
- minced garlic
- baby spinach
- pasta (we prefer rigatoni or penne)
- optional toppings:
- fresh basil
- grated parmesan

Step 1: Preheat oven to 400º F. Rinse and dry the grape tomatoes. Place in an oven safe baking dish and pour in olive oil, stirring to evenly coat. Add a bit of salt and pepper to taste. Create space in the center of the pan for the Boursin cheese spread. Pour a little more olive oil over the top of the cheese. Bake in oven for 30-35 minutes or until tomatoes are tender and beginning to brown.
Step 2: Meanwhile, bring a large pot of water to boil over high heat. Add a teaspoon of salt and pasta to pot. Boil pasta according to package directions. Reserve 1 cup of pasta liquid before draining.
Step 3: Remove baking dish from oven and add minced garlic and spinach. The heat will wilt the spinach. Carefully stir all of the ingredients together (use the back of the spoon to smoosh the tomatoes being cautious of the hot liquid). Add the cooked pasta to the dish and stir to thoroughly combine. Add a bit of the pasta water, a little at a time, if it doesn’t seem creamy enough. Scoop into bowls and top with fresh basil or parmesan. Yum!
Tips:
- We use the Garlic and Herb, but Boursin makes other flavors such as Shallot and Chive if you’d like to try them.
- The original recipe uses feta cheese which is also delicious, but not for everyone. It still gets surprisingly creamy and we love it! Use 8-10 oz.
- Enjoy as a main course or serve as a side with grilled chicken or steak!
