- 2 pkgs. Boursin Garlic and Herb Cheese Spread
- 2 pints grape tomatoes
- ¼ cup olive oil (plus more for drizzling)
- salt and pepper (to taste)
- 3 garlic cloves (minced)
- 5 oz baby spinach (roughly chopped)
- 16 oz rigatoni pasta (or pasta of your choice)
- 1 cup reserved pasta water
- fresh basil (chopped)
- grated parmesan
Preheat oven to 400º F. Rinse and dry the grape tomatoes. Place in an oven safe baking dish and pour in olive oil, stirring to evenly coat. Add a bit of salt and pepper to taste. Create space in the center of the pan for the Boursin cheese spread. Pour a little more olive oil over the top of the cheese. Bake in oven for 30-35 minutes or until tomatoes are tender and beginning to brown.
Meanwhile, bring a large pot of water to boil over high heat. Add a teaspoon of salt and pasta to pot. Boil pasta according to package directions. Reserve 1 cup of pasta liquid before draining.
Remove baking dish from oven and add minced garlic and spinach. The heat will wilt the spinach. Carefully stir all of the ingredients together (use the back of the spoon to smoosh the tomatoes being cautious of the hot liquid). Add the cooked pasta to the dish and stir to thoroughly combine. Add a bit of the pasta water, a little at a time, if it doesn't seem creamy enough. Scoop into bowls and top with fresh basil or parmesan. Yum!
- We use the Garlic and Herb, but Boursin makes other flavors such as Shallot and Chive if you'd like to try them.
- The original recipe uses feta cheese which is also delicious, but not for everyone. It still gets surprisingly creamy and we love it! Use 8-10 oz.
- Enjoy as a main course or serve as a side with grilled chicken or steak!
