Baked Layered Taco Dip
This baked layered taco dip is exactly the kind of snack we want for game day: hot, cheesy, easy to make and sturdy enough to load up a tortilla chip without wearing half of it.
With about 15 minutes of prep and a short trip through the oven, it’s an easy one to throw together when people are coming over—or when chips and dip sound suspiciously like dinner. No judgment here.

Ingredients
- 1 lb. lean ground beef
- 1 packet taco seasoning
- 1 (16 oz.) can refried black beans
- 8 oz. full-fat sour cream
- 1 (16 oz.) jar chunky salsa, drained
- 8 oz. shredded Mexican blend or cheddar cheese
- Tortilla chips, for serving

Step-by-Step Directions
Step 1: Preheat the oven to 350°F with a rack positioned in the upper half of the oven. Cook the ground beef with the taco seasoning according to the package directions. Drain well and set aside to cool slightly. Meanwhile, pour the salsa into a fine-mesh strainer to drain off the excess liquid.

Step 2: Spread the refried black beans evenly in the bottom of a 9×13-inch baking dish. Spread the sour cream over the beans, then layer the slightly cooled ground beef and drained salsa on top.




Step 3: Sprinkle the shredded cheese evenly over the salsa. Bake for 10–12 minutes, or until the dip is heated through and the cheese is melted.

Step 4: For a golden, bubbly top, broil for 30–90 seconds, watching it closely. Only use the broiler if your baking dish is broiler-safe. Let the dip rest for about 5 minutes before serving with tortilla chips.

🍋 Simply Made Suggestions and Swaps
- Drain it well: Let the salsa drain while you prepare everything else, and drain the cooked ground beef thoroughly. This keeps extra liquid out of the dip.
- Give the beef a minute: Let it cool slightly before adding it over the sour cream. It doesn’t need to be cold, just not piping hot.
- Swap the beans: Regular refried beans work just as well if you prefer them over refried black beans.
- Use the easy cheese: Bagged Mexican blend or shredded cheddar works perfectly. Or freshly shred your own medium and sharp cheddar if you’re feeling extra. We were. 😂
- Broiling is optional: The dip is ready once it’s hot and the cheese is melted. Broiling just gives you that browned, bubbly top. Make sure your dish is broiler-safe first.
