Ingredients

  • 1 lb. lean ground beef
  • 1 packet taco seasoning plus ingredients called for on the package
  • 1 16 oz. can refried black beans
  • 8 oz. full-fat sour cream
  • 1 16 oz. jar chunky salsa, drained
  • 8 oz. shredded Mexican blend or cheddar cheese
  • Tortilla chips for serving

Instructions

  • Preheat the oven to 350°F with a rack positioned in the upper half of the oven.
  • Cook the ground beef with the taco seasoning according to the package directions. Drain well and set aside to cool slightly. Meanwhile, drain the salsa in a fine-mesh strainer.
  • Spread the refried black beans evenly in the bottom of a 9x13-inch baking dish. Spread the sour cream over the beans, followed by the ground beef, drained salsa and shredded cheese.
  • Bake for 10–12 minutes, or until heated through and the cheese is melted.
  • For a golden, bubbly top, broil for 30–90 seconds, watching closely. Only broil if your baking dish is broiler-safe. This step is optional.
  • Let rest for about 5 minutes before serving with tortilla chips.

Notes

  • Drain the beef and salsa well to prevent excess liquid.
  • Regular refried beans can be substituted for refried black beans.
  • Use Mexican blend, cheddar, or your favorite combination of shredded cheese.
  • Broiling is optional. Only broil in a broiler-safe baking dish.
  • Nutrition information does not include tortilla chips for serving.
