Whipped Feta with Roasted Nectarines

Ingredients:
- necterines
- olive oil
- balsamic vinegar
- balsamic glaze; store-bought or Homemade Balsamic Glaze
- honey
- salt

Step-by-Step Directions:
Step 1: Preheat the oven to 400º F.
Step 2: Cut the nectarines into bite-sized pieces and arrange them in a single layer on a parchment-lined baking sheet.

Step 3: In a small bowl or jar, mix one tablespoon each of olive oil, balsamic vinegar, honey, and ⅛-¼ tsp of cinnamon, along with a pinch of salt and freshly ground black pepper. Drizzle this over the nectarines and pop them in the oven for 15 minutes until they’re beautifully softened and caramelized. After roasting, give those delicious bite-size nectarines 10 minutes to cool.



Step 4: While the nectarines are cooling, make the whipped feta. Combine the crumbled feta, softened cream cheese, zesty lemon juice, and rich olive oil in a large mixing bowl. Using an electric hand mixer, blend everything until smooth and creamy. Add more olive oil to achieve perfect taste and texture, if desired!


Step 5: Assemble the dish by spreading the whipped feta onto a serving platter or individual plates. Place the roasted nectarines over the whipped feta.
