One Pan Taco Chicken Casserole

Ingredients:
- a packet of taco seasoning or homemade taco seasoning; see Tips
- jar of salsa
- white rice
- can of black beans or kidney beans; drained
- frozen corn
- bell pepper; diced
- prepacked prepared diced or sliced chicken or rotisserie chicken; shredded
- water
Toppings:
- sour cream
- cilantro
- red onions; pickled
- jalapeños; jarred
- avocado
- shredded cheese
- lime; wedges

Step-by-Step Directions:
Step 1: Preheat the oven to 400º F. *Assemble homemade taco seasoning in a small bowl; See Tips for the recipe.
Step 2: In a casserole dish, combine the taco seasoning, water, and salsa. Add the drained beans, corn, diced pepper, chicken, and rice. Mix all ingredients.
Step 3: Place the uncovered casserole dish into the oven and bake for 40-45 minutes or until the rice is fully cooked and all liquid is absorbed. Garnish with your favorite taco toppings, and serve alone, with tortillas or in lettuce boats.

- Homemade Taco Seasoning Recipe:
- 1 Tbsp chili powder
- 1 tsp smoked paprika
- 1 tsp cumin
- ¼ tsp cayenne pepper
- ½ tsp oregano
- ½ salt & pepper
- Use ½ the taco seasoning for a mild flavor.
- Use a store-bought rotisserie chicken.
