Ingredients:
- a packet of taco seasoning or homemade taco seasoning; see Tips
- jar of salsa
- frozen cauliflower rice
- can of black beans or kidney beans; drained
- frozen corn
- bell pepper; diced
- prepackaged cooked diced or sliced chicken; or rotisserie chicken; shredded
Toppings:
- sour cream
- cilantro
- red onions; pickled
- jalapeños; jarred
- avocado
- shredded cheese
- lime; wedges

Step-by-Step Directions:
Step 1: Preheat the oven to 400º F. *Assemble homemade taco seasoning in a small bowl; See Tips for the recipe.
Step 2: Combine the taco seasoning, water, and salsa in a casserole dish. Add the drained beans, corn, diced pepper, chicken, and cauliflower rice. Mix all ingredients.



Step 3: Place the uncovered casserole dish into the oven and bake for 45-55 minutes or until most liquid is absorbed. Garnish with your favorite taco toppings, and serve alone, with tortillas or in lettuce boats.

Tips:
