Casserole Ingredients:
- 15 oz jar of salsa
- 1 packet taco seasoning (or homemade taco seasoning; see Tips for the recipe)
- 1 cup white rice
- 15 oz can of black beans or kidney beans (drained)
- 1 cup frozen corn ( or canned corn)
- 1 bell pepper (diced)
- 1½ cups cooked chicken; diced or sliced
- 2 cups water
Toppings:
- sour cream
- cilantro
- red onions; pickled
- jalapeños; jarred
- avocado
- shredded cheese
- lime; wedges
Preheat the oven to 400º F. *Assemble homemade taco seasoning in a small bowl, if you are using it. In a casserole dish, combine the taco seasoning, water, and salsa. Add the drained beans, corn, diced pepper, chicken, and rice. Mix all ingredients.
Place the casserole dish into the oven and bake for 30-40 minutes or until the rice is fully cooked and all liquid is absorbed. Garnish with your favorite taco toppings, and serve alone, with tortillas, or in lettuce boats.*Nutritional values do not include toppings.
- Here's the recipe for Homemade Taco seasoning: 1 tbsp chili powder, 1 tsp smoked paprika, 1 tsp cumin, ¼ tsp cayenne pepper, ½ tsp oregano, ½ tsp salt, and pepper.
- Use ½ the taco seasoning for a mild flavor.
- You can use a store-bought rotisserie chicken.
- Use ground chicken or turkey. (Cook thoroughly before adding to the casserole.)
