Ingredients

Casserole Ingredients:

  • 15 oz jar of salsa
  • 1 packet taco seasoning (or homemade taco seasoning; see Tips for the recipe)
  • 1 cup white rice
  • 15 oz can of black beans or kidney beans (drained)
  • 1 cup frozen corn ( or canned corn)
  • 1 bell pepper (diced)
  • cups cooked chicken; diced or sliced
  • 2 cups water

Toppings:

  • sour cream
  • cilantro
  • red onions; pickled
  • jalapeños; jarred
  • avocado
  • shredded cheese
  • lime; wedges

Instructions

  • Preheat the oven to 400º F.
    *Assemble homemade taco seasoning in a small bowl, if you are using it.
  • In a casserole dish, combine the taco seasoning, water, and salsa. Add the drained beans, corn, diced pepper, chicken, and rice. Mix all ingredients.
  • Place the casserole dish into the oven and bake for 30-40 minutes or until the rice is fully cooked and all liquid is absorbed. Garnish with your favorite taco toppings, and serve alone, with tortillas, or in lettuce boats.
    *Nutritional values do not include toppings.

Notes

  • Here's the recipe for Homemade Taco seasoning: 1 tbsp chili powder, 1 tsp smoked paprika, 1 tsp cumin, ¼ tsp cayenne pepper, ½ tsp oregano, ½ tsp salt, and pepper.
  • Use ½ the taco seasoning for a mild flavor.
  •  You can use a store-bought rotisserie chicken.
  • Use ground chicken or turkey. (Cook thoroughly before adding to the casserole.)
