Chocolate Cherry Muffins

Ingredients:

  • eggs
  • box of Devil’s cake mix
  • cherry pie filling
  • chocolate liqueur
  • chocolate frosting-optional
  • Maraschino Cherries-optional

Step-by-Step Directions:

Step 1: Preheat the oven to 350 º F and line either 12-13 jumbo muffins with paper liners or line 24 regular muffin cups with paper liners.

Step 2: Mix the cake mix and eggs in a large bowl with an electric hand mixer. Add the cherry pie filling and the chocolate liqueur and continue to beat on LOW speed until the mixture is smooth. *There should still be visible pieces of cherries.

Step 3: Divide the muffin batter into the lined cups and bake for 17-20 minutes or until a toothpick inserted in the middle of one of the muffins comes out clean.

Step 4: Cool the muffins completely before serving or garnishing with warm chocolate frosting drizzle and Maraschino Cherries.

Tips:

  • For Jumbo Muffins fill a heaping ¼ cup into each prepared muffin cup.
  • For Chocolate Frosting Drizzle-Place some frosting into a microwave-safe dish and warm for 10-20 or until the frosting is slightly warm and can be easily drizzled on top of the muffins.
  • Nutritional values exclude the chocolate frosting and the Maraschino Cherries.
