Mint leaves and Rosemary

Step 1: If mincing basil, mint, or other leafy herbs, separate the leaves from the stem. If mincing herbs such as rosemary, hold your thumb and finger at the thickest part of the stem, and using your other hand, run it down the stem quickly, separating the rosemary from the stem.

Step 2: Gather the leaves together and roll tightly. Carefully hold the roll of herbs, keeping your fingers clear of the knife and cut into small pieces.
