Cilantro Lime Rice

This easy, flavorful side dish pairs well with any grilled meat. It’s also a perfect compliment to fajitas and tacos!

Ingredients:

  • cooked rice
  • Spanish olive oil
  • lime juice
  • fresh cilantro

Step 1: Cook your choice of rice according to package. We use Jasmine rice cooked in a rice cooker, but any rice will work for this. Remove cilantro leaves from stem and coarsely chop while rice is cooking.

Step 2: When rice has finished cooking, place in a bowl. Drizzle oil and lime juice over the top then stir in cilantro until throughly combined. Serve immediately and enjoy!

Tips:

  • A rice cooker is a great investment if you make a lot of rice. You don’t have to get an expensive one to make fluffy rice at home.
  • Add a dash of salt when cooking rice, if desired.

  • 1 lime, juiced (or 1 oz bottled lime juice)
  • 1/2 cup fresh cilantro
