Chipotle Chicken Tostadas with Chipotle Honey Vinaigrette

Ingredients:
- 1 lb ground chicken
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp smoked paprika
- ¼ tsp black pepper
- ¼ tsp salt
- ¼ tsp chipotle powder
- 1 tsp olive oil
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 5-7 Jalapeño slices, jarred
- 2 green onions, chopped
- ¼ cup cotija cheese
- 2 cups romaine lettuce, chopped

Chipotle Honey Vinaigrette
- 2 limes, juiced
- ⅓ cup light olive oil
- 2 Tbsp chipotle peppers in adobo
- ¼ cup cilantro
- ¼ tsp dried oregano
- ¼ tsp salt
- 1 tsp garlic powder
- 1 Tbsp honey, *more if needed
- 3 Tbsp water
- 4 Tbsp white vinegar

Step-by-Step Directions:
Step 1: Heat olive oil in a large saucepan over medium heat.
Combine the ground chicken with garlic, onion powder, smoked paprika, black pepper, salt, and chipotle powder.
Use a wooden spoon to break the ground chicken into crumbles, and let the flavors mingle while cooking for 5 minutes.

Step 2: Mix the diced bell pepper, halved cherry tomatoes, chopped green onions, and zesty jarred jalapeños slices with the ground meat!
Cook everything together and sit occasionally for 5 to 7 minutes until the bell pepper is nicely softened and the meat is thoroughly cooked. Then, take it off the heat.



Step 3: To whip up a delicious chipotle honey vinaigrette, just toss all the ingredients into a small blender or food processor and give it a good pulse until everything is nice and smooth.
If the dressing feels a bit thick, just splash in some water and pulse it again until it’s perfect for your taste.




Step 4: Build your tostadas by adding the meat, vegetable, and spice mixture to the crispy tostadas, drizzling with the chipotle and honey vinaigrette, and then topping with chopped romaine lettuce, juice from lime wedges, cotija cheese, and cilantro.
