Salad Ingredients
- 10.5-12 oz grape or cherry tomatoes (or two large heirloom tomatoes)
- 1/4 cup Vidalia onion (thinly sliced)
- fresh thyme or fresh mint leaves
French Bistro Vinaigrette
- 4 Tbsp olive oil
- 2 Tbsp red wine vinegar
- 1 Tbsp dijon mustard
- 1-2 tsp fresh thyme
- salt & pepper
Slice a quarter of the onion thin and set aside. If using heirloom tomatoes, slice them thinly and then quarter them if desired. Alternatively, cut cherry or grape tomatoes in half.
Place sliced onion and tomatoes in a bowl and add fresh mint leaves or thyme.
Place all the French Bistro Vinaigrette ingredients in a jar with a lid and shake until combined. Pour the desired French Bistro Vinaigrette over the salad to taste, then enjoy!
