Mango BBQ Sauce

Ingredients

  • 1 ripe mango (peeled and diced)
  • 1 cup ketchup
  • ¼ cup apple cider vinegar
  • ¼ cup brown sugar
  • 2 Tbsp soy sauce
  • 1 Tbap lime juice
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • salt and pepper to taste

Instructions

  • In your blender, mix together diced mango, ketchup, apple cider vinegar, brown sugar, soy sauce, lime juice, garlic powder, smoked paprika, salt, and pepper. Blend until perfectly smooth, or pulse for a chunkier texture.
  • Transfer the mixture to a saucepan and bring it to a simmer over medium heat. Once simmering, reduce the heat and cook for 5 minutes, stirring occasionally, until the sauce thickens. Allow it to cool before serving. Store it in an airtight container in the fridge.

Notes

  • Try drizzling over grilled vegetables.
  • Mango BBQ Sauce can be made ahead of time and stored in an airtight container in the fridge until ready to use.
