- 2-3 lb. beef chuck roast
- 1 cup baby carrots
- ½ cup chopped onion
- 1 pkg. slow cooker pot roast seasoning mix
- 1 cup water
- 1 Tbsp olive oil
- dash of Worcestershire sauce
- 1 large sprig of Rosemary
Sear the beef.Heat the olive oil in a skillet over medium-high heat. Sear the chuck roast on both sides until nicely browned.
Add everything to the slow cooker.Place the carrots and onions in the slow cooker and add the seared beef.
Add the seasoning.Combine the pot roast seasoning mix with 1 cup of water. Stir in a dash of Worcestershire sauce and pour the mixture over the beef and vegetables. Top with the rosemary sprig.
Let the slow cooker do its thing.Cover and cook on LOW for 6–8 hours, or until the beef is tender and easily pulls apart with a fork.
