- 1 lb lean ground beef
- 1 onion (diced)
- 2 cloves of garlic (minced)
- 1½ cups plain frozen hash brown potatoes
- 4 cups beef broth
- 14 oz can of diced tomatoes with juices
- 10 oz condensed tomato soup (1 can)
- 2 tsp Worcestershire sauce
- 1 tsp Italian seasoning blend
- salt and black pepper to taste
- 2 cups frozen mixed vegetables
In a large pot, brown the onion, ground beef, and garlic until all traces of pink are gone, then drain off any excess fat. Return the cooked onion and ground beef to the pot.
Add the broth, canned tomatoes, tomato soup, Worcestershire sauce, Italian seasoning, and the frozen potatoes and vegetables to the pot. Bring the ingredients to a boil, then reduce the heat to a simmer for 10-15 minutes, or until the potatoes are tender.
- Try replacing potatoes with pasta, add an extra cup of broth, and cook until the pasta is tender.
- Try sprinkling some cheese on top of your soup!
