- 3-4 oz Pineapple juice
- 2 oz Blueberry Simple Syrup (see tips for the recipe)
- 2 oz lime juice
- 2-4 oz Sparking water
- fresh blueberries, pineapple slices, mint leaves (garnish optional)
Blueberry Syrup Ingredients:
- 1 cup blueberries (fresh or frozen)
- 1 cup sugar
- 1 cup water
Begin by making the blueberry simple syrup.
Combine one cup of fresh or frozen blueberries, one cup of water, and one cup of sugar in a pot. Heat over medium-low heat.
Stir occasionally until the sugar dissolves, then remove from the burner.
Cool the syrup completely, then strain it into a container and refrigerate.
Add the pineapple, lime juice, and blueberry simple syrup to a shaker with ice and give it a quick shake—about 10 seconds, we’re not auditioning for bartender of the year.
Strain into a glass with ice, top with sparkling water, and toss in a few blueberries.
