  • kidney beans (canned; drained)
  • ground spicy pork sausage 
  • ground beef
  • cajun seasoning
  • ground cumin
  • dried oregano
  • tomato paste

Step-by-Step Directions:

Step 1: Preheat oven to 425 º F. Chop the peeled onion into chunks. Chop the garlic. Wash, halve, de-seed, and cut the bell peppers into chunks. Place vegetables into a mixing bowl and add the drained beans, tomato paste, and olive oil. Coat the vegetables and the beans with olive oil and tomato paste. Set aside.

Step 2: Place the ground beef and pork in a mixing bowl. Add the Cajun seasoning, oregano, cumin, salt, and pepper. Using food-safe gloves or a wooden spoon, combine the ingredients. Spread the mixture onto a lined or lightly greased sheet pan. Bake in the preheated oven for 5 minutes, then remove it from the oven.

Step 3: Spoon the vegetable and bean mixture over the beef and pork. Reduce the oven temperature to 375 º F and bake for another 10-15 minutes until the vegetables are tender and the meat is no longer pink.

Step 4: Garnish with juice of half a lime, roughly chopped cilantro, halved cherry tomatoes, sour cream, and leftover lime wedges. Serve with warmed tortillas, and enjoy!

  • 1 lb ground spicy pork sausage
  • ½-1 lb ground beef
  • 1 Tbsp cajun seasoning
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 2 Tbsp tomato paste
  • 2-4 oz fresh cilantro -roughly chopped (1 handful; roughly chopped)
  • salt & pepper ( to taste)
  • 1-3 limes ( cut into wedges)
  • 4 oz cherry tomatoes (halved)
  • 2-4 Tbsp sour cream
  • large or small tortillas
  • food safety gloves – optional

Instructions
