Buffalo Chicken Sandwich

This grilled chicken breast is so easy and versatile. We prefer to make sandwiches with it, but it can also be used in a wrap, a salad, or on its own!

Ingredients:

  • boneless skinless chicken breasts
  • vinegar
  • olive oil
  • salt
  • pepper
  • buffalo sauce
  • optional:
    • sandwich buns
    • sliced cheese
    • ranch dressing
    • blue cheese dressing

Step 1: Flatten chicken breasts with a mallet if they are very thick or uneven. Split each breast in two to make 2 sandwich size pieces. Place in a dish. Pour olive oil and vinegar over chicken pieces and mix around to throughly coat. Sprinkle salt and pepper to taste over each side. Cover and refrigerate for at least 30 minutes.

Step 2: Heat grill to medium. Grill chicken breasts for 7-8 minutes then flip. Grill for another 7-10 minutes or until cooked through and registering 165º F with an instant thermometer. Brush one side of chicken with buffalo sauce and cook for 1 minute. Flip and brush other side with sauce. Cook for 1 minute. Top with sliced cheese such as provolone or cheddar if desired and close lid for 1 minute to melt.

Step 3: Grill buns if desired. Build sandwich with lettuce, dressing, and/or blue cheese crumbles and extra buffalo sauce.

Tips:

  • Don’t care for buffalo chicken? Substitute barbecue sauce for buffalo sauce.
  • Don’t have buffalo sauce? Combine hot sauce with butter in equal parts.
