Autumn Slow Cooker Pork Loin

Ingredients:

  • pork loin fillets (lean)
  • dried cranberries
  • dijon mustard
  • apple cider
  • apple cider vinegar
  • apple-finely chopped
  • clove of garlic-Minced Garlic
  • chicken broth
  • honey
  • salt & pepper

Step 1: Sprinkle pork loins with salt & pepper and place into slow cooker.

Step 2: Combine the dried cranberries, dijon mustard, apple cider vinegar, apples, chicken broth and honey in a sauce pan and heat on low heat until ingredients are warmed through.

Step 3: Pour warm sauce on top of the pork loin and cover slow cooker. Set on (Low) setting for 8 hours.

Step 4: When pork loin is done cooking, transfer to a platter to rest, leaving the sauce in the slow cooker.

Step 5: Turn slow cooker to warm. Add 1 -2 tsp of cornstarch (optional) and using an immersion blender, blend in a smooth gravy.

Step 6: Slice and plate pork loin and then pour sweet gravy over top. Serve with mashed potatoes and enjoy!

*Caution-Slow cooker will be hot!

  • ½ cup dried cranberries
  • ¼ cup dijon mustard
  • ½ cup apple cider
  • ¼ cup apple cider vinegar
  • 1 apple-finely chopped
  • 1 clove of garlic (minced)
  • ¼ cup chicken broth
  • 2 Tbsp honey
  • salt & pepper

Instructions

  • Sprinkle pork loins with salt & pepper and place into slow cooker.
  • Combine the dried cranberries, dijon mustard, apple cider vinegar, apples, chicken broth and honey in a sauce pan and heat on low heat until ingredients are warmed through.
  • Pour warm sauce on top of the pork loin and cover slow cooker. Set on (Low) setting for 8 hours.
