- 3 lbs pork loin fillets or (2x 1.5lbs pork loin fillets-lean)
- ½ cup dried cranberries
- ¼ cup dijon mustard
- ½ cup apple cider
- ¼ cup apple cider vinegar
- 1 apple-finely chopped
- 1 clove of garlic (minced)
- ¼ cup chicken broth
- 2 Tbsp honey
- salt & pepper
Sprinkle pork loins with salt & pepper and place into slow cooker.
Combine the dried cranberries, dijon mustard, apple cider vinegar, apples, chicken broth, and honey in a saucepan and heat on low heat until the ingredients are warmed.
Pour warm sauce on top of the pork loin and cover slow cooker. Set on (Low) setting for 8 hours.
When the pork loin is done cooking, transfer it to a platter to rest, leaving the sauce in the slow cooker.
Turn the slow cooker to warm. Add 1 -2 tsp of cornstarch (optional) and use an immersion blender to blend in a smooth gravy. Slice and plate the pork loin, then pour the sweet sauce. Serve with mashed potatoes, and enjoy!*Caution- The slow cooker will be hot!
