Autumn Slow Cooker Pork Loin
Slow cooker meals are a lifesaver for cooks who are busy during the day, but still want to give their family a home cooked meal.

Ingredients

  • 3 lbs pork loin fillets or (2x 1.5lbs pork loin fillets-lean)
  • ½ cup dried cranberries
  • ¼ cup dijon mustard
  • ½ cup apple cider
  • ¼ cup apple cider vinegar
  • 1 apple-finely chopped
  • 1 clove of garlic (minced)
  • ¼ cup chicken broth
  • 2 Tbsp honey
  • salt & pepper

Instructions

  • Sprinkle pork loins with salt & pepper and place into slow cooker.
  • Combine the dried cranberries, dijon mustard, apple cider vinegar, apples, chicken broth, and honey in a saucepan and heat on low heat until the ingredients are warmed.
  • Pour warm sauce on top of the pork loin and cover slow cooker. Set on (Low) setting for 8 hours.
  • When the pork loin is done cooking, transfer it to a platter to rest, leaving the sauce in the slow cooker.
  • Turn the slow cooker to warm. Add 1 -2 tsp of cornstarch (optional) and use an immersion blender to blend in a smooth gravy. Slice and plate the pork loin, then pour the sweet sauce. Serve with mashed potatoes, and enjoy!
    *Caution- The slow cooker will be hot!
