Sweet Potato Casserole with Brandy

Every Thanksgiving this sweet side dish is the center of attention. Enjoy our twist on this American classic with the addition of brandy.

Ingredients:

  • sweet potatoes
  • vanilla extract
  • light brown sugar
  • ground cinnamon
  • flour
  • salted butter
  • unsalted butter
  • brandy
  • pecans-crushed

Step 1: Wash, peel and cut sweet potatoes into chunks. Place potatoes in a large pot with enough water to cover the potatoes. Bring to a boil, then reduce heat and simmer until tender, about 20 minutes. Drain and place cooked potatoes back into the large pot.

Step 2: Preheat oven to 375º F. Generously grease a casserole dish with 1 Tbsp of softened salted butter.

Step 3: Place sugar, cinnamon, butter, vanilla extract and brandy into the large pot and mash the cooked sweet potatoes with a potato masher until no lumps remain. *Alternatively, you can use an electric hand mixer.

Step 4: Transfer sweet potato mixture to the greased casserole dish.

Step 5: To make the topping, melt unsalted butter in the microwave using a microwave safe dish.

Step 6: Add brown sugar, flour, cinnamon, pecans and melted butter to a medium sized bowl. Using a fork combine ingredients well. Using your fingers, take pieces of the mixture and place on top of the sweet potato.

Step 6: Bake in oven until topping is slightly browned, about 20-25 minutes. Serve warm and enjoy!

  • ¾ cup light brown sugar
  • 1-1½ tsp ground cinnamon
  • 4 Tbsp butter (1 Tbsp for greasing casserole pan)
  • 4 Tbsp brandy liquor

Topping Ingredients

  • ¼ cup unsalted butter
  • ¾ cup light brown sugar
  • cup flour
  • 1 tsp ground cinnamon
  • ¼-½ cup crushed pecans (optional)
