Poached Chicken

Poaching chicken is an easy and healthy way to cook chicken. It can be added to casseroles, soups, stews, sandwiches, and more. The chicken becomes tender enough to shred or you can chop it into whichever size chunks needed. All you need is chicken, a pot, water, and a dash of salt!

  • Makes: about 4 cups
  • Total Time: 20 minutes

Ingredients:

  • salt
  • Boneless, skinless chicken (we use a combination of breasts and thighs)

Step 1: Fill a large pot with water. Heat to a boil over high heat and add salt.

Step 2: Carefully add chicken and return water to a boil. Reduce heat to medium-low and simmer, partially cover with lid, for 10-15 minutes or until chicken is cooked through (165º F).

Step 3: Carefully remove chicken from hot water and let cool on a clean plate 

Step 4: Cut chicken into bite sized cubes or shred with 2 forks, discarding any fatty pieces.

Use immediately or store in refrigerator for up to 3 days until ready to use.
