- 2 pounds boneless, skinless chicken
- 1 tsp salt
- water
Fill a large pot with water. Heat to a boil over high heat and add salt.
Carefully add chicken and return water to a boil. Reduce heat to medium-low and simmer, partially cover with lid, for 10-15 minutes or until chicken is cooked through (165º F).
Carefully remove chicken from hot water and let cool on a clean plate
Cut chicken into bite sized cubes or shred with 2 forks, discarding any fatty pieces.
Makes about 4 cups. Use immediately or store in refrigerator for up to 3 days until ready to use.
