Poached Chicken

An easy way to cook chicken. Cut-up or shredded, it can be added to soups, sandwiches, salads, and more.

Ingredients

  • 2 pounds boneless, skinless chicken
  • 1 tsp salt
  • water

Instructions

  • Fill a large pot with water. Heat to a boil over high heat and add salt.
  • Carefully add chicken and return water to a boil. Reduce heat to medium-low and simmer, partially cover with lid, for 10-15 minutes or until chicken is cooked through (165º F).
  • Carefully remove chicken from hot water and let cool on a clean plate
  • Cut chicken into bite sized cubes or shred with 2 forks, discarding any fatty pieces.
  • Makes about 4 cups. Use immediately or store in refrigerator for up to 3 days until ready to use.

Notes

  • Use breasts, thighs or a combination of both
