- 2 sweet potatoes (medium sized)
- 1 lb ground turkey meat or chicken (lean)
- ½ cup shredded carrots
- ½ cup zucchini (diced)
- ¼ cup chicken broth or vegetable broth
- ¼ tsp ground turmeric
- 2 fresh rosemary sprigs
- salt and freshly ground black pepper (to taste)
Dice the zucchini and set aside.
Step 2: Fill a medium-sized pot with water and add a pinch of salt. Bring the water to a boil. While the water is heating up, wash and peel the sweet potatoes. Using a sharp knife, cut them into bite-sized pieces. Place the bite-sized sweet potatoes into the boiling water for approximately 15 minutes or until softening. Drain the water from the pot, and using a hand mixer or a manual potato masher, mash the sweet potatoes until they are smooth. Add a small amount of olive oil, salt, and freshly ground pepper if desired.
Step 3: While the sweet potatoes are boiling, cook the ground turkey meat in a pan with a tablespoon of olive oil over medium heat. Cook the turkey until browned, then add the shredded carrots, diced zucchini, turmeric, chicken broth, and two rosemary sprigs to the pan. Cook until the veggies are softened. Add additional salt and freshly ground pepper to taste.
Step 4: Remove the two rosemary sprigs and discard them. Next, place the meat and vegetable mixture in a baking dish and smooth the mashed sweet potatoes over it.
Step 5: Bake in the oven for 20-25 minutes or when the topping is slightly golden. Serve hot and enjoy!
- Sweet Potato Shepherd's Pie can be made in advance and covered in the fridge until ready to bake in the oven.
