Equipment

  • electric hand mixer
  • 2 large mixing bowl
  • 4 small glass jars or bowls (2.5 oz each)

Ingredients

  • 3.4 oz JELL-O lemon instant pudding
  • 2 cups milk
  • cups heavy whipping cream
  • 1 Tbsp Lemon zest
  • 1 Tbsp powdered sugar (optional)
  • Optional garnish: blueberries & mint leaves

Instructions

  • Combine 2 cups of cold milk with the JELL-O lemon instant pudding powder using a whisk or an electric hand mixer. Let it set in the fridge for 5 minutes.
  • While the lemon pudding is setting, make the whipped cream. Whisk the heavy cream using the electric hand mixer until light and fluffy. For extra sweetness, add a tablespoon of powdered sugar to the mixture.
  • Fold the whipping cream into the lemon pudding and blend gently. Once blended, spoon the mixture into small 2.5 oz glass jars or bowls. Top with lemon zest, blueberries, and mint leaves. Serve immediately or chill in the fridge until ready to serve. Enjoy!

Notes
